I need to get one of these in the next 10 days as a gift for my wife with a dock. My budget is sub-300. She will mostly use it to listen to music and not spend time playing games or surfing the internet on it. I prefer to spend a little more on the dock than getting a touch.
If i am going to miss out a lot then i can buy a ipod touch 8gb model which is the cheapest.

Not sure if it is an option to wait three months for the next generation iPod touch with the "retina display". That would be the best option. That would probably retail for $200 for a $32GB model. It would support thousands of apps. My personal favorites (which I use on iPad) are those for crosswords, chess, news readers and kids stories. Your wife may also like to keep recipes (from epicure) or read web pages offline (as with Instapaper). The touch also allows you to play the Genius Mix (which is like a radio station that plays from your collection). The Nano or the classic don't have that ability.
In general, you will find that the touch, iPhone or the iPad are a lot more than just music players. I have a 160GB classic, which I used once in a while. I use the iPad all the time.

How are you saying that the next generation ipod touch would retail at $200? Is it just a guess? Can i use a sounddock with an ipad? Is this not required for ipad? whichever device i buy will end up being a prime source of music.

iPad has only 64GB of memory. You have to be selective in what you store regarding videos, photos and apps. Many apps are few hundred MBs big. So far I haven't used it as a music player. It is not that dock friendly.
The pricing estimate for iPod touch is of course a guess. Apple keeps the product details close to chest.
The entry level (which actually is a generation older) iPod touch now starts at $200 for 8GB. The entry level for next gen would have either a 16GB or 32GB but due to the type of chip Apple may use, I am hoping they would go for 32GB. But regardless of what size storage it comes with, the entry level price should be $200. Also, at that price it is a direct competitor to PS2Go, which retails for $250. With retina display, the games are going to be much better on Touch than on PS2. Games are one of the best ways of monetizing a platform, as Facebook is finding with Zynga. Apple seriously wants to make most money off the apps not off just the initial hardware.
To figure out which dock to buy, check if it will work with iPhone 4. The Touch is likely to be iPhone4 minus the phone capability. Unlike with previous generations, the touch is likely to have at least a front facing camera (if not both front and rear). It will probably not have the GPS sensor (or non-WiFi mapping ability) that iPhone 4 has.
Personally, I am hoping for a 128GB touch. That should hold all my music. At that point I will can my Classic 160GB.
