Do u need 5 entrees for veg and non veg? I can suggest make common gravy and then use it for paneer or chicken dish, this will reduce your effort. some ideas: chana masala, dum aloo, dal makani which can be used by both veg and non veg folks.

Places to stay in Maui
We stayed at the Westin Resort in Kanapaali and it was a very pleasant experience, the resort has great swimming pools for kids and the resort is well maintained.
